Any friends of my cousin Bridget Damberg Byrnes are friends of mine, that is just how it goes in the South! When Bridget speaks, the world listens.
So I had to take a look and try this new healthy drink that is available on Amazon and locally in West Palm Beach, FL.
I was gifted a Kombucha mushroom when I first moved to Taos, NM in 1994. I had no idea what it was, but it came with directions. I took care of that little guy for a few years until I had to move. Unfortunately, I had to give him away. He is still thriving in someone’s fridge somewhere in Taos.
So I know a bit about Kombucha brewing and I know about beer brewing. I have participated in brewing beer with my brother. What a fascinating process. I also have been responsible for babysitting the batch and listening to the fermentation process bubble through the gauge at the top of the tank. This is all home brewing, of course.
Olivia and Daniel McCarthy created this drink so their kids would have a healthier alternative to all the carbonated beverages on the market. What a great idea!, if it isn’t available, create it yourself.

In their words: With our country in a health crisis and two children of our own, we wanted to create the best tasting and healthiest alternative to soda we could. Kombucha is fermented tea – an ancient non-alcoholic health remedy recently popularized in the U.S.
My husband, Daniel, and I began the company in the kitchen of our farm-to-fork organic restaurant, Olivia’s Good News Cafe, in Nashville. Daniel was a home beer brewer and I was passionate about natural health, so he began brewing kombucha for the cafe. It became so popular we closed the restaurant and moved to West Palm Beach, FL where we could brew year round with the endless summer.
While most kombuchas are made with fruit juices, we wanted our kombucha to be made with only teas, medicinal herbs, and spices. We chose three traditions of herbal medicine – American Folk medicine, Ayurveda, and Traditional Chinese medicine – and created a kombucha representing each one. With Dan’s brewing background and my passion for herbal health, we were able to make delicious, refreshing, and nutritious elixirs that both adults and kids love!
